Steamed Kale with Sauteed Onions and Garlic

Yield: 4 servings

This quick and easy way to get kale into your diet will soon become an addiction. The sweet, browned onions perfectly balance the slightly bitter taste of the kale, making a delightful side to any dish. Toss some meat or tempeh into the pan, and you have a complete meal. Other vegetables can also be added.

2 tablespoons olive oil, plus more for drizzling
1/2 onion, sliced thin
2 cloves garlic, minced or sliced thin
3-4 cups chopped kale
3 tablespoons ground flaxseeds
Pinch salt

Heat the olive oil in a large skillet over medium heat. Saute the onion for 5-7 minutes, until soft and frgrant. Add the garlic and cook for another minute.

Throw the kale on top of the onions; cover and let steam for 3-5 minutes, until bright green and slightly wilted.

Remove the kale to a plate and drizzle with a little olive oil. Top with the onions and sprinkle with the flaxseeds and salt. Serve warm.

    I thought this was wonderful. I used a whole onion (we love them) and sliced my garlic thin. Also- I used toasted pine nuts because I didn’t have flax on hand. Just before adding the salt and nuts I splashed the kale with a little rice wine vinegar.
