Chicken Quesadillas

Yield: 1-2 servings

This easy Mexican favorite is a hot item for lunch boxes or after school snacks. Chicken is a good protein source and avocado adds good omega-3 fats for proper brain functioning for kids. Make sure to use whole grain tortillas for added nutrition and a reduced spike in sugar levels.

2 sprouted whole grain tortillas
1/4 cup grated cheese
1/2 cup shredded cooked chicken
1-2 tablespoons mild salsa
1/2 avocado, sliced

Heat a large skillet over medium heat. When hot, add one tortilla and warm for several seconds. Flip the tortilla and sprinkle the cheese, chicken and salsa evenly over the tortilla. Heat for 1 minute or so, until the cheese softenes and the bottom is slightly browned.

Add the sliced avocado and immediately top with a second tortilla. Flip and warm on the second side, until slightly browned on the bottom, 1-2 minutes.

Slide the quesadilla onto a cutting board and slice into four wedges.
